A refreshing and crunchy Cabbage and Apple Slaw featuring a mix of green and red cabbage, crisp apple, carrots, and a tangy, slightly sweet mayonnaise-based dressing. This slaw is perfect as a side dish or topping for sandwiches, offering a delightful balance of flavors and textures.

Ingredients

Slaw

  • 4 cups green cabbage, shredded
  • 1 cup red cabbage, shredded
  • 1 large apple (such as Granny Smith), cored and julienned
  • 1/2 cup carrots, shredded
  • 1/4 cup green onions, sliced
  • 1/4 cup raisins or dried cranberries (optional)

Dressing

  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Prepare the slaw ingredients: In a large bowl, combine the shredded green cabbage, shredded red cabbage, julienned apple, shredded carrots, sliced green onions, and raisins or dried cranberries if using. Toss gently to mix all the fresh ingredients evenly.
  2. Make the dressing: In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper until smooth and well combined. Adjust seasoning to taste.
  3. Toss the slaw with dressing: Pour the dressing over the cabbage and apple mixture. Toss thoroughly to coat all the ingredients with the dressing evenly.
  4. Chill the slaw: Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld and the slaw to chill and crisp.

Notes

  • Use Granny Smith apples for a tart and crisp texture; other firm apples can be substituted based on preference.
  • Raisins or dried cranberries are optional but add a nice touch of sweetness and chewiness.
  • This slaw can be made a few hours ahead and stored in the refrigerator to enhance flavor.
  • Adjust honey quantity in the dressing to taste for desired sweetness.
  • For a lighter version, substitute mayonnaise with Greek yogurt or a low-fat alternative.
