Instructions

  1. Prepare the Ingredients: Peel and dice 2 ripe mangoes into small pieces to ensure easy blending and smooth texture for the popsicles.
  2. Blend the Mixture: In a blender, combine the diced mangoes, 1/2 cup coconut milk, 1 tablespoon honey or agave syrup (if using), and a splash of lime juice. Blend until the mixture is completely smooth and consistent in texture.
  3. Fill the Molds: Pour the blended mixture into popsicle molds, making sure to leave a little space at the top of each mold to allow for expansion during freezing.
  4. Insert Sticks and Freeze: Insert popsicle sticks into the molds and place them in the freezer. Freeze for at least 4 to 6 hours, or until the popsicles are fully solidified.
  5. Unmold the Popsicles: To easily remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out.
