Slow Cooker Beef Manhattan is a comforting, hearty dish combining tender beef roast with savory gravy, served over bread and topped with creamy mashed potatoes. Perfect for a cozy family dinner, this slow-cooked classic offers melt-in-your-mouth beef infused with rich flavors from Worcestershire and soy sauce, enhanced by simple seasonings and thickened to a luscious consistency.

Ingredients

Beef and Gravy

  • 2 pounds beef roast (chuck or round)
  • 1 medium onion, sliced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt

Thickener

  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

To Serve

  • 6 slices of bread (white or Texas toast style)
  • 4 cups mashed potatoes (homemade or prepared)

Instructions

  1. Prepare the Slow Cooker: Place the sliced onion at the bottom of the slow cooker to form a bed for the beef roast.
  2. Add the Beef and Seasonings: Place the beef roast on top of the onions. Pour in beef broth, Worcestershire sauce, soy sauce, then sprinkle garlic powder, onion powder, dried thyme, black pepper, and salt evenly over the beef.
  3. Slow Cook the Beef: Cover and cook on low for 8 hours or on high for 4-5 hours until the beef is very tender and easily shredded with a fork.
  4. Make the Slurry: In a small bowl, combine cornstarch and cold water, mixing well to create a slurry without lumps.
  5. Thicken the Gravy: Remove the beef from the slow cooker and set aside, keeping it warm. Stir the slurry into the slow cooker liquid and turn the slow cooker to high. Cook uncovered for 15-20 minutes, stirring frequently until the gravy thickens.
  6. Slice the Bread and Prepare Mashed Potatoes: While the gravy thickens, lightly toast the bread slices if desired and prepare mashed potatoes if using homemade.
  7. Assemble the Beef Manhattan: Place a slice of bread on each plate, top with shredded beef, ladle generous amounts of thickened gravy over the beef, and finish with a scoop of creamy mashed potatoes on top.
  8. Serve and Enjoy: Serve the dish warm immediately for a classic, comforting meal.

Notes

  • For best results, use a well-marbled beef chuck roast for tenderness and flavor.
  • You can substitute beef broth with vegetable broth for a milder flavor.
  • Mashed potatoes can be homemade or store-bought; creamy texture complements the gravy well.
  • Optional: Add a splash of red wine to the slow cooker for deeper flavor.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 1 month.
  • Use gluten-free bread and soy sauce if a gluten-free version is desired.
