The Royal Hawaiian is a vibrant and refreshing tropical cocktail featuring Empress 1908 Indigo Gin, pineapple and lemon juices, and sweet orgeat syrup. Its striking layered presentation and tropical flavors make it an ideal drink for warm weather or island-inspired gatherings.

Ingredients

For the Cocktail

  • 1.5 oz Empress 1908 Indigo Gin
  • 2.5 oz pineapple juice
  • 0.5 oz lemon juice
  • 0.5 oz orgeat syrup

Garnish

  • Pineapple slice

Instructions

  1. Combine Juices and Syrup: In a cocktail shaker, pour the pineapple juice, lemon juice, and orgeat syrup together to create the sweet and tangy base of the drink.
  2. Add Ice and Shake: Add ice cubes into the shaker and shake vigorously for about 15 seconds until the mixture is well chilled and slightly diluted for balance.
  3. Strain into Glass: Fill a Collins glass with crushed ice and strain the chilled juice mixture over the ice to form the foundation layer of the cocktail.
  4. Layer Gin: Gently pour the Empress 1908 Indigo Gin over the top of the strained mixture to create a striking layered effect showcasing the gin’s signature indigo color.
  5. Garnish and Serve: Finish by placing a fresh pineapple slice on the rim of the glass for a tropical and decorative touch, then serve immediately.

Notes

  • Use freshly squeezed lemon and pineapple juice if possible for the best flavor.
  • Orgeat syrup is an almond-flavored sweetener that adds depth and sweetness; it can be found in specialty liquor stores or made at home.
  • Crushed ice is essential for the right texture and chilling effect in this cocktail.
  • For a non-alcoholic version, omit the gin and increase pineapple juice slightly.
  • The layering effect is best achieved by pouring the gin gently over the back of a spoon.
