Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking and ease cleanup.
  2. Boil Carrots: Place the peeled and cut carrot rounds into salted boiling water and cook for 10–12 minutes or until they are fork-tender but not falling apart. Drain the carrots and allow them to cool slightly for easier handling.
  3. Slam Carrots: Arrange the cooked carrots on the prepared baking sheet, spacing them evenly. Using the bottom of a glass or measuring cup, gently press down on each carrot piece to flatten slightly, creating a ‘smashed’ effect.
  4. Season: Drizzle the flattened carrots with olive oil, then evenly sprinkle garlic powder, smoked paprika, salt, and black pepper on top. Finish by sprinkling the grated Parmesan cheese over the carrots to add a savory, cheesy crust.
