This Prickly Pear Margarita Mocktail is a refreshing and vibrant non-alcoholic drink perfect for any occasion. Featuring a blend of limeade, prickly pear syrup, fresh lime juice, and a homemade simple syrup, topped with fizzy club soda and rimmed with a sweet and salty sugar-kosher salt mix. Garnished with fresh lime wedges, it’s an easy-to-make, flavorful mocktail bursting with citrus and a unique fruity twist.

Ingredients

For the Drink:

  • 1 cup prepared limeade
  • ice cubes, as needed
  • 2 tbsp prickly pear syrup (e.g., Desert Blossom)
  • 2 tbsp fresh lime juice (about 1 medium lime)
  • 1/4 cup simple syrup (homemade recommended)
  • club soda, as needed (for fizz and to taste)

For the Garnish:

  • lime wedges

For the Rim:

  • sugar and kosher salt mixture (for a sweet and salty kick)

Instructions

  1. Prepare the Glasses: Slice a lime into wedges and run a wedge around the rim of each glass to moisten it. Dip the glass rims into a sugar and kosher salt mixture until evenly coated. Set the glasses aside for later use.
  2. Mix the Drink Base: In a pitcher or large measuring cup, combine 1 cup of prepared limeade, 1/4 cup simple syrup, 2 tablespoons of freshly squeezed lime juice, and 2 tablespoons of prickly pear syrup. Stir thoroughly until the mixture is homogeneous. Taste and adjust sweetness if desired.
  3. Assemble and Chill the Drinks: Fill the prepared glasses with ice cubes. Pour the mixed drink base evenly into each glass. Top off each glass with club soda to add fizz and gently stir if necessary to combine.
  4. Garnish and Serve: Add a fresh lime wedge to each glass for garnish. For an extra burst of citrus flavor, squeeze an additional lime wedge into the drink before enjoyment.

Notes

  • Adjust the sweetness by adding more or less simple syrup according to taste.
  • For best flavor, use homemade simple syrup made from equal parts sugar and water heated until dissolved.
  • The prickly pear syrup can be substituted with other fruity syrups if unavailable, but it adds a unique taste.
  • To make the rim mixture, combine equal parts sugar and kosher salt or adjust to preference.
  • This mocktail is perfect for summer gatherings or non-alcoholic celebrations.
