Ingredients

Beef

  • Beef Tenderloin, cut into small, bite-sized pieces
  • Salt, to taste
  • Black Pepper, to taste

Mushroom Duxelles

  • Button or Cremini Mushrooms, finely chopped
  • Shallots, finely chopped
  • Garlic, 2 cloves, minced
  • Fresh Thyme
  • Butter, for sautéing
  • Salt, to taste
  • Black Pepper, to taste

Pastry & Finishing

  • Puff Pastry (store-bought, thawed)
  • Dijon Mustard, thin layer for topping
  • Egg, beaten, for egg wash

Instructions

  1. Season and Sear Beef: Season the beef tenderloin pieces generously with salt and black pepper. Heat a skillet over medium-high heat and sear the beef pieces for 1-2 minutes on each side until nicely browned. Remove and let cool.
  2. Prepare Mushroom Duxelles: In the same skillet, melt butter over medium heat. Add finely chopped mushrooms, shallots, garlic, and fresh thyme. Cook for 8-10 minutes until the mixture turns golden brown and most moisture has evaporated. Season with salt and pepper to taste and allow to cool.
  3. Shape Pastry Squares: On a lightly floured surface, roll out the thawed puff pastry and cut into 3×3 inch squares for perfect bite-sized portions.
  4. Assemble Wellington Bites: Place a small spoonful of the cooled mushroom duxelles in the center of each pastry square. Top with a seared piece of beef and a thin layer of Dijon mustard. Fold the corners of the pastry up around the filling, sealing tightly to enclose the ingredients.
  5. Chill Bites: Arrange the assembled bites on a parchment-lined baking sheet and refrigerate for at least 20 minutes to help them hold their shape during baking.
  6. Apply Egg Wash: Brush each chilled pastry bite with beaten egg to give a golden, shiny finish once baked.
  7. Bake: Preheat the oven to 400°F (200°C). Bake the bites for 12-15 minutes or until the puff pastry is golden brown and puffed up beautifully.
  8. Cool and Serve: Allow the mini Beef Wellington bites to cool slightly before serving. Enjoy them warm for the best flavor experience!

Notes

  • For best results, use high-quality beef tenderloin for tenderness and flavor.
  • Ensure the mushroom mixture is well cooked and moisture evaporated to avoid soggy pastry.
  • Keep assembled bites chilled before baking so they maintain shape and crispness.
  • These appetizers can be prepared in advance and baked right before serving.
  • Serve with a side of horseradish sauce or mustard for added zest.
