A flavorful and quick-to-make Moo Shu Pork recipe featuring tender pork tenderloin stir-fried with fresh vegetables and tossed in a savory hoisin-based sauce, served wrapped in warm tortillas for a delicious Asian-inspired meal.

Ingredients

Meat

  • 1 lb pork tenderloin, thinly sliced

Vegetables

  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup shiitake mushrooms, sliced
  • 1/2 cup carrot, julienned
  • 1/2 cup cabbage, shredded

Sauces and Seasonings

  • 1 tablespoon olive oil
  • 2 tablespoons hoisin sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • Salt and pepper to taste

Serving

  • 8 small flour tortillas or wrappers
  • Fresh cilantro, chopped (optional)

Instructions

  1. Cook the pork: Heat olive oil in a large skillet or wok over medium-high heat. Add the thinly sliced pork tenderloin and cook for 5-7 minutes until browned and cooked through. Remove the pork from the skillet and set aside.
  2. Sauté aromatics: In the same skillet, add the thinly sliced onions and minced garlic. Sauté for 2-3 minutes until the onions are softened and the garlic is fragrant.
  3. Cook the vegetables: Add sliced shiitake mushrooms, julienned carrots, and shredded cabbage to the skillet. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
  4. Prepare the sauce: In a small bowl, whisk together hoisin sauce, soy sauce, rice vinegar, sesame oil, ground ginger, salt, and pepper until well combined.
  5. Combine pork and sauce: Return the cooked pork to the skillet with the vegetables. Pour the sauce mixture over the ingredients and stir everything together to evenly coat. Cook for an additional 2-3 minutes to allow flavors to meld.
  6. Warm the tortillas: Heat the flour tortillas or wrappers in a dry skillet or microwave until warm and pliable.
  7. Assemble and serve: Spoon the pork and vegetable mixture onto the warmed tortillas. Garnish with chopped fresh cilantro if desired. Roll or fold the tortillas and enjoy immediately.

Notes

  • For a lower-carb option, substitute flour tortillas with lettuce leaves or low-carb wraps.
  • You can add scrambled eggs to the pork mixture for a more authentic moo shu pork experience.
  • Adjust the amount of hoisin and soy sauce to taste for desired sweetness and saltiness.
  • Use a wok if available to enhance the stir-fry process but a large skillet works well too.
  • Fresh shiitake mushrooms can be substituted with other mushrooms like cremini or button mushrooms.
