Cookie Dough

Instructions

  1. Prepare the Lemon Cream Filling: In a mixing bowl, beat together the cream cheese and 2 tablespoons of butter until smooth and creamy. Gradually add 1½ cups powdered sugar, lemon juice, ½ teaspoon lemon zest, and a pinch of salt. Mix thoroughly until well combined. Cover and chill the filling in the refrigerator for 30 minutes to firm up.
  2. Make the Cookie Dough: In a separate bowl, cream together 1 cup softened unsalted butter and ½ cup powdered sugar until light and fluffy. Stir in 1 teaspoon vanilla extract and 2 teaspoons lemon zest. Gradually mix in the 2 cups all-purpose flour and ¼ teaspoon salt until a smooth dough forms.
  3. Assemble the Cookies: Take a tablespoon of the cookie dough and flatten it in your hand. Place about ½ teaspoon of chilled lemon cream filling in the center, then carefully wrap the dough around the filling and roll it into a ball, sealing the filling inside.
  4. Bake the Cookies: Preheat the oven to 350°F (175°C). Place the filled dough balls onto a lined baking sheet, spacing them evenly. Bake for 12–14 minutes, or until the edges are lightly golden but the cookies remain soft.
