This Keto Sausage and Spinach Casserole is a hearty, low-carb dish that combines savory Italian sausage, fresh spinach, and a creamy blend of cheeses and eggs. Perfect for a nutritious breakfast, brunch, or dinner, it’s easy to prepare and bakes to a golden, bubbly perfection.

Ingredients

Sausage and Vegetables

  • 1 pound Italian sausage (mild or spicy), casings removed
  • 4 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • Olive oil for cooking

Cheese and Egg Mixture

  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese, softened
  • 3 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven. Set your oven to 350°F (175°C) to warm up while you prepare the casserole mixture.
  2. Cook the sausage and spinach. Heat olive oil in a large skillet over medium heat, add the Italian sausage and cook until browned, breaking it up as it cooks. Add the minced garlic and chopped spinach, stirring and cooking until the spinach has wilted.
  3. Prepare the creamy egg mixture. In a mixing bowl, whisk together the heavy cream, softened cream cheese, eggs, salt, and pepper until you achieve a smooth consistency.
  4. Combine the ingredients. Stir the cooked sausage and spinach mixture into the creamy egg mixture until everything is evenly incorporated.
  5. Assemble the casserole. Pour the combined mixture into a greased 9×9-inch baking dish. Evenly sprinkle the shredded mozzarella cheese on top.
  6. Bake the casserole. Place the dish in the preheated oven and bake for 25-30 minutes, or until the casserole is fully set and the cheese on top is golden and bubbly.
  7. Cool and serve. Remove from the oven and allow the casserole to cool slightly before slicing and serving.

Notes

  • Using fresh spinach adds moisture; if using frozen spinach, thaw and squeeze out excess water before adding.
  • You can use either mild or spicy Italian sausage depending on your spice preference.
  • Ensure the cream cheese is softened for easier mixing.
  • The casserole can be stored in fridge for up to 3 days and reheated well.
  • Feel free to add other low-carb veggies like mushrooms or bell peppers for variation.
