This Keto Beef Stew is a hearty, low-carb dish perfect for those following a ketogenic lifestyle. Tender beef chuck is slow-cooked with cauliflower and green beans in a flavorful broth infused with garlic, onion, and herbs, creating a comforting and nutritious meal that is both satisfying and easy to prepare.

Ingredients

Meat

  • 2 lbs (900g) beef chuck, cut into cubes

Vegetables

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups cauliflower florets
  • 1 cup green beans, trimmed and cut

Liquids & Fats

  • 3 tablespoons olive oil
  • 4 cups beef broth

Herbs & Seasonings

  • 1 teaspoon dried thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste

Instructions

  1. Prepare the beef: Heat olive oil in a large pot over medium-high heat. Add beef cubes and sear them until browned on all sides. This step helps to lock in flavor. Once browned, remove the beef and set aside.
  2. Sauté aromatics: In the same pot, add diced onion and minced garlic. Cook until the onion is soft and translucent to build the base flavor of the stew.
  3. Add ingredients and simmer: Return the seared beef to the pot. Pour in beef broth and add cauliflower florets, green beans, dried thyme, rosemary, salt, and pepper. Stir to combine all ingredients evenly.
  4. Cook the stew: Bring the mixture to a gentle simmer, then cover the pot and reduce heat to low. Let the stew cook slowly for 1.5 to 2 hours until the beef is tender and flavors are melded.
  5. Serve: Remove from heat and serve the stew hot. Garnish with fresh herbs if desired for an extra burst of freshness.

Notes

  • Beef chuck is ideal for this stew due to its marbling and tenderness when slow-cooked.
  • You can substitute fresh thyme and rosemary for dried if preferred, using about 1 tablespoon of each.
  • For thicker broth, remove the lid in the last 15 minutes to reduce the liquid.
  • This stew can be refrigerated for up to 3 days and reheated gently on the stovetop.
  • Adding other low-carb vegetables such as mushrooms or zucchini is optional for variety.
