These Keto Beef Enchiladas are a low-carb twist on the classic Mexican dish, featuring seasoned ground beef wrapped in low-carb tortillas, topped with enchilada sauce and melted cheese. Perfect for those following a ketogenic or low-carb diet, this recipe is flavorful, easy to prepare, and baked to perfection with a golden, bubbly cheese topping.

Ingredients

For the Filling

  • 1 lb (450g) ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For Assembly

  • 4 low-carb tortillas
  • 1 cup enchilada sauce (no sugar added)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the enchiladas.
  2. Cook Beef Mixture: In a skillet over medium heat, cook the ground beef until browned. Add the diced onion and minced garlic, and cook until the onion is softened and fragrant.
  3. Season the Beef: Stir in chili powder, cumin, paprika, salt, and pepper to the beef mixture. Mix thoroughly and then remove the skillet from heat.
  4. Assemble Enchiladas: Place a portion of the beef mixture onto each low-carb tortilla. Roll up each tortilla tightly and place them seam-side down in a baking dish.
  5. Add Sauce and Cheese: Pour the enchilada sauce evenly over the rolled tortillas in the baking dish. Then sprinkle shredded cheese generously on top.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until the cheese is fully melted and bubbling, and the sauce is heated through.
  7. Garnish and Serve: Remove the enchiladas from the oven, garnish with fresh cilantro, and serve warm.

  • Feel free to substitute ground turkey or chicken for a leaner protein option.
  • Choose a sugar-free enchilada sauce to maintain low carb content.
  • Cheese can be swapped for your favorite Mexican blend or dairy-free alternative if desired.
  • For extra heat, add chopped jalapeños to the beef mixture or top enchiladas with hot sauce before serving.
