Humpty Dumpty Dip is a rich and creamy baked egg dip made with chopped hard-boiled eggs, sharp cheddar cheese, mayonnaise, and a touch of spicy Dijon mustard and hot sauce. Topped with crispy bacon, green onions, and paprika, this crowd-pleaser is perfect for parties or as a savory snack served warm with crackers, chips, or toasted bread.

Ingredients

Eggs

  • 8 large eggs

Base Mixture

  • 1 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce (optional, adjust to taste)
  • 1 teaspoon paprika plus extra for garnish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Add-ins

  • 1 cup shredded sharp cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, finely chopped

For Serving

  • Crackers, chips, or toasted bread slices

Instructions

  1. Cook the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil. Once boiling, turn off the heat, cover the pan, and let the eggs sit for 10 to 12 minutes to cook through. Drain the hot water, cool the eggs under cold running water, peel off the shells, and chop the eggs roughly.
  2. Mix the Base: In a medium mixing bowl, combine the mayonnaise, Dijon mustard, hot sauce (if using), paprika, garlic powder, onion powder, salt, and black pepper. Stir this mixture until fully blended, then fold in the chopped eggs until they are well coated with the sauce.
  3. Add Cheese and Bacon: Mix in the shredded sharp cheddar cheese and half of the crumbled bacon, distributing them evenly throughout the egg mixture.
  4. Bake: Preheat your oven to 350°F (175°C). Grease a baking dish lightly, then spread the egg and cheese mixture evenly into the dish. Bake uncovered for 15 to 20 minutes, or until the dip is hot and bubbly around the edges.
  5. Garnish and Serve: Remove the baking dish from the oven and sprinkle the remaining bacon, chopped green onions, and a pinch of paprika over the top. Serve the dip warm alongside crackers, chips, or toasted bread slices for dipping.

Notes

  • For easier peeling, use eggs that are a few days old rather than fresh eggs.
  • If you prefer less spice, omit the hot sauce or reduce the amount to your taste.
  • You can substitute cheddar cheese with other cheese varieties like Monterey Jack or pepper jack for a different flavor profile.
  • Make sure to grease the baking dish well to prevent sticking and ease cleanup.
  • This dip can be prepared in advance and baked just before serving to save time.
