Ingredients

Roasted Garlic

  • 2 heads garlic
  • 1 teaspoon olive oil

Dip

  • 8 ounces cream cheese, room temperature
  • 1 cup sour cream
  • 4 ounces shredded mozzarella cheese (about 1 cup)
  • ½ cup grated parmesan cheese, divided
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon fresh chopped parsley, as a garnish
  • Crostini or crackers, for serving

Instructions

  1. Preheat and prepare garlic heads: Preheat your oven to 400℉. Remove any excess papery layers from the outside of the garlic heads. Slice off about ¼ inch from the top of each garlic head to expose the individual cloves. Discard the sliced top portions.
  2. Roast the garlic: Create a small foil bowl to hold the garlic heads upright. Place the garlic heads in the foil bowl, drizzle the tops with 1 teaspoon of olive oil, and cover completely with foil. Roast in the oven for 40-50 minutes until the garlic cloves are soft and lightly browned. Remove from oven and allow the garlic to cool enough to handle.
  3. Reduce oven temperature: Lower your oven temperature to 350℉ to prepare for baking the dip.
  4. Prepare the dip mixture: Once the roasted garlic is cool, squeeze the soft cloves out of their skins into a mixing bowl. Add 8 ounces of room temperature cream cheese, 1 cup of sour cream, shredded mozzarella, half of the parmesan cheese (¼ cup), salt, and pepper. Mix until well combined and smooth.
  5. Bake the dip: Transfer the garlic dip mixture to an oven-safe dish. Sprinkle the remaining parmesan cheese evenly over the top. Bake at 350℉ for 20-25 minutes or until the dip is hot and bubbling and the cheese on top is lightly golden.
  6. Garnish and serve: Remove the dip from the oven, sprinkle with 1 teaspoon of fresh chopped parsley for a pop of color and freshness. Serve warm with crostini or crackers for dipping.
