Instructions

  1. Soften the Cream Cheese: Remove the cream cheese from the refrigerator and let it sit at room temperature for 30 minutes to soften, making it easier to mix with the other ingredients.
  2. Prepare Ingredients: Chop the olives, peppadew or roasted red peppers, shred the cheese if not pre-shredded, finely chop the parsley and mince the garlic if using. Reserve a small portion of these ingredients to use as garnish later.
  3. Mix the Filling: In a mixing bowl, combine the softened cream cheese with the chopped olives, peppers, shredded cheese, parsley, minced rosemary, garlic (if using), salt, and black pepper. Stir until all ingredients are evenly incorporated.
  4. Shape the Log: Lay out a sheet of plastic wrap on a flat surface. Spoon the cream cheese mixture onto the center of the wrap and shape it into a log by rolling the plastic wrap tightly around it. Twist the ends of the wrap to secure and seal the shape.
