These creamy lemon truffles are a delightful blend of tangy lemon, smooth cream cheese, and sweet white chocolate. Perfectly coated in chopped nuts or coconut flakes, they make a refreshing and indulgent treat that’s simple to prepare and sure to impress.

Ingredients

Truffle Filling

  • 8 oz Cream Cheese (use full-fat for extra richness)
  • 1 cup Powdered Sugar (coconut sugar can be used as a healthier alternative)
  • 1/4 cup Fresh Lemon Juice (fresh is best, avoid bottled juice)
  • 1 tbsp Lemon Zest (grate the zest for an extra pop of flavor)
  • 1 tsp Vanilla Extract (enhances the flavor)

Coating

  • 8 oz White Chocolate (dark chocolate can be used for a bolder taste)
  • 1/2 cup Chopped Nuts or Coconut Flakes (optional for coating)

Instructions

  1. Prepare the filling: In a mixing bowl, combine the cream cheese, powdered sugar, fresh lemon juice, lemon zest, and vanilla extract. Use an electric mixer on medium speed to blend the mixture until it is smooth and well combined, scraping down the sides of the bowl as needed to ensure an even mix.
  2. Chill the mixture: Cover the bowl with plastic wrap or a lid and refrigerate the mixture for about 30 minutes. This will help the filling firm up, making it easier to shape into truffle balls.
  3. Form the truffles: Once chilled, scoop out small portions of the mixture using a spoon or melon baller. Roll each portion gently between your palms to form smooth, evenly shaped balls.
  4. Melt the chocolate: Place the white chocolate in a microwave-safe bowl and melt it in 30-second increments, stirring well after each interval. Continue until the chocolate is fully melted and smooth, avoiding overheating.
  5. Coat the truffles: Dip each cream cheese ball into the melted white chocolate, making sure it is fully coated. Then, immediately roll the coated truffle in chopped nuts or coconut flakes if desired, for added texture and flavor.
  6. Set the truffles: Arrange the coated truffles on a baking sheet lined with parchment paper. Place them in the refrigerator for about 15 minutes to allow the chocolate coating to harden completely before serving.

Notes

  • Use full-fat cream cheese for a richer and creamier texture.
  • Fresh lemon juice and zest provide the best flavor; avoid bottled lemon juice.
  • If you prefer a less sweet option, adjust the powdered sugar quantity to taste.
  • Dark chocolate can be substituted for white chocolate for a more intense flavor.
  • Store the truffles in an airtight container in the refrigerator and consume within 5 days for optimal freshness.
