This Toffee Chex Mix is a delightful, crispy caramel brittle snack perfect for munching daily. Combining the crunch of Chex cereal and nuts with a rich, buttery toffee coating, it creates an irresistible treat that balances sweetness with a hint of saltiness and a touch of airy texture from baking soda.

Ingredients

For the Mix

  • 6 cups Chex (Rice or Corn)
  • 1 cup Nuts (Pecan halves, walnuts, or almonds) Mix or match as desired

For the Toffee Coating

  • 1 cup Unsalted Butter (Quality butter for best flavor)
  • 1 cup Brown Sugar (Light or dark as per preference)
  • 1/2 cup Light Corn Syrup (Honey can be a substitute)
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Baking Soda (For airy texture)
  • 1/2 teaspoon Fine Salt (Balances sweetness)

Instructions

  1. Prepare the Mix: In a large mixing bowl, combine the 6 cups of Chex cereal with 1 cup of your choice of nuts such as pecan halves, walnuts, or almonds. Stir to mix evenly.
  2. Make the Toffee Coating: In a medium saucepan over medium heat, melt 1 cup of unsalted butter. Once melted, add 1 cup of brown sugar and 1/2 cup of light corn syrup. Stir constantly and bring the mixture to a gentle boil.
  3. Boil the Toffee: Allow the mixture to boil for about 4 to 5 minutes without stirring, until it thickens and reaches a rich caramel color.
  4. Add Flavor and Texture: Remove the saucepan from heat and immediately stir in 1 teaspoon of vanilla extract, 1 teaspoon of baking soda, and 1/2 teaspoon of fine salt. The baking soda will cause the mixture to bubble and foam, creating an airy texture essential to the brittle.
  5. Coat the Mix: Quickly pour the toffee mixture over the Chex and nuts, tossing gently but thoroughly with a spatula or spoon to coat all pieces evenly before the toffee hardens.
  6. Cool and Harden: Spread the coated mix in a single layer on a parchment-lined baking sheet. Allow it to cool completely at room temperature until the brittle coating hardens and becomes crisp.
  7. Store and Serve: Once cooled, break into clusters if necessary. Store in an airtight container to maintain crispness. Enjoy as a snack or share your irresistible caramel brittle with friends and family.

Notes

  • Use quality unsalted butter for the best flavor and smooth toffee texture.
  • Light or dark brown sugar can be used, but dark brown sugar adds a deeper molasses flavor.
  • Light corn syrup helps prevent crystallization; honey can be substituted but may affect texture and flavor.
  • Mix nuts as preferred or omit for a nut-free version.
  • Work quickly when coating the mix, as the toffee sets fast once removed from heat.
  • Store the finished mix in an airtight container at room temperature for up to two weeks to maintain freshness and crunch.
