Creamy Asparagus Bacon Gnocchi is a luscious, comforting dish combining tender gnocchi with crispy bacon and fresh asparagus in a rich Parmesan cream sauce. This skillet recipe is quick and easy, perfect for a satisfying weeknight dinner with a superb blend of textures and flavors.

Ingredients

Gnocchi

  • 1 lb gnocchi (store-bought or homemade)

Bacon and Vegetables

  • 6 slices bacon, chopped
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 2 cloves garlic, minced

Sauce

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Garnish

  • Fresh parsley, chopped

Instructions

  1. Cook the gnocchi: Boil water and cook the gnocchi according to package instructions, usually until they float to the surface. Drain them well and set aside.
  2. Cook the bacon: Heat a large skillet over medium heat and add the chopped bacon. Cook until the bacon is crispy and browned. Remove with a slotted spoon and drain on paper towels, leaving the bacon fat in the skillet for added flavor.
  3. Sauté asparagus and garlic: In the same skillet with bacon drippings, add the trimmed asparagus pieces. Sauté for 3 to 4 minutes until they begin to soften but still retain some crunch. Add the minced garlic and cook for another minute until fragrant.
  4. Prepare the cream sauce: Pour the heavy cream into the skillet with the asparagus and garlic and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese until it melts completely to create a smooth, creamy sauce. Season the sauce with salt and freshly ground black pepper to taste.
  5. Toss gnocchi and bacon with sauce: Add the cooked gnocchi and crispy bacon back into the skillet. Gently toss everything together to coat the gnocchi in the creamy Parmesan sauce evenly.
  6. Serve: Plate the creamy asparagus bacon gnocchi hot and garnish with freshly chopped parsley for a burst of color and freshness.

Notes

  • You can substitute heavy cream with half-and-half for a lighter version, though the sauce will be less rich.
  • For a vegetarian option, omit bacon and add mushrooms for as much umami flavor.
  • If using homemade gnocchi, ensure they are cooked gently to avoid breaking apart in the sauce.
  • Freshly grated Parmesan cheese is recommended for better melting and flavor.
  • Adjust seasoning at the end to suit your taste, especially the salt as bacon and Parmesan are salty.
