Ingredients

For the Base

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (cold and cubed)
  • 1 cup buttermilk
  • 2 tsp vanilla extract

For the Cinnamon Filling

  • 1/2 cup brown sugar
  • 2 tbsp ground cinnamon
  • 1/4 cup unsalted butter (melted)

For the Cream Cheese Frosting

  • 8 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 2 cups powdered sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease or line a 9×13 inch baking pan with parchment paper for easy removal.
  2. Prepare Base Mixture: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Cut in the cold, cubed unsalted butter until the mixture resembles coarse crumbs. Stir in the buttermilk and vanilla extract until combined and a soft dough forms.
  3. Assemble Base Layer: Press about two-thirds of the dough evenly into the prepared baking pan to form the base layer.
  4. Mix Cinnamon Filling: In a small bowl, combine the brown sugar and ground cinnamon. Drizzle with the melted butter and mix until well blended to create the cinnamon filling.
  5. Add Cinnamon Filling: Sprinkle the cinnamon filling mixture evenly over the base layer in the pan.
  6. Top with Remaining Dough: Drop spoonfuls of the remaining dough evenly over the cinnamon filling, gently pressing some to cover the filling but leaving some areas slightly exposed for a marbled effect.
  7. Bake Bars: Bake in the preheated oven for 30-35 minutes, or until the top is golden and a toothpick inserted into the dough (not the filling) comes out clean.
  8. Prepare Frosting: While the bars are baking, beat together the softened cream cheese and unsalted butter until smooth and fluffy. Gradually add the powdered sugar, mixing well to combine. Add milk and vanilla extract and beat until the frosting is spreadable and creamy.
  9. Cool and Frost: Allow the bars to cool completely in the pan. Once cooled, spread the cream cheese frosting evenly over the top.
  10. Serve: Cut into bars and serve as a cozy, indulgent dessert or snack.

Notes

  • Use cold butter for the base to achieve a tender, crumbly texture.
  • Ensure the bars are completely cool before frosting to prevent melting the frosting.
  • These bars can be stored in an airtight container in the refrigerator for up to 5 days.
  • For an extra indulgence, sprinkle chopped pecans or walnuts into the cinnamon filling.
  • If buttermilk is unavailable, you can make a substitute by adding 1 tablespoon of lemon juice or vinegar to 1 cup of regular milk and letting it sit for 5 minutes.
