This BBQ Chicken Flatbread recipe is a quick and flavorful meal featuring shredded chicken tossed in BBQ sauce, layered over crispy flatbreads, topped with melted mozzarella cheese, red onions, and sweet peppers. Perfect for a casual lunch or dinner, this easy-to-make flatbread brings together smoky, tangy, and fresh flavors with a satisfying crunch.

Ingredients

For the Base:

  • 2 flatbreads (lavash, pita, or pre-made pizza crust)

For the Topping:

  • 200 g cooked or roasted chicken (shredded)
  • 4-5 tbsp your favorite BBQ sauce
  • 100 g shredded mozzarella cheese (or a mix of cheddar and mozzarella)
  • 1 small red onion (thinly sliced)
  • 1 small sweet pepper (thinly sliced, optional)
  • 1-2 tbsp chopped fresh cilantro or parsley (for garnish)

For Serving (Optional):

  • Sour cream or Greek yogurt
  • Lime wedges

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (390°F). If using a pre-made pizza base, follow the package instructions given.
  2. Prepare Flatbreads: Arrange the flatbreads on a baking sheet lined with parchment paper to prevent sticking and to facilitate easy cleanup.
  3. Mix Chicken and BBQ Sauce: Toss the shredded chicken with 3 tablespoons of BBQ sauce and let it sit for 5 minutes. This allows the chicken to absorb the smoky and tangy flavors thoroughly.
  4. Spread BBQ Sauce Base: Spread a thin layer of BBQ sauce—about 1 tablespoon—on each flatbread to build a flavorful base for the toppings.
  5. Add Chicken Topping: Evenly distribute the BBQ chicken mixture atop each flatbread to create a generous and flavorful layer.
  6. Top with Cheese and Veggies: Sprinkle the shredded mozzarella cheese evenly, then add the thinly sliced red onion and sweet pepper if using, for added crunch and sweetness.
  7. Bake Flatbreads: Place the prepared flatbreads in the oven and bake for 10-12 minutes, or until the cheese is fully melted, lightly browned, and the flatbread edges become crispy.
  8. Cool Slightly and Garnish: Remove from the oven and allow the flatbreads to cool for a couple of minutes. Garnish with chopped fresh cilantro or parsley to add a fresh, vibrant touch.
  9. Serve: Optionally serve with sour cream or Greek yogurt and lime wedges on the side for added creaminess and tang.

Notes

  • You can substitute flatbread with pita or naan for different textures.
  • Add jalapeños or chili flakes if you prefer a spicy kick.
  • Leftover BBQ chicken works perfectly, making this a great way to use up cooked chicken.
  • For a lighter version, use reduced-fat cheese and whole wheat flatbreads.
  • Sour cream or Greek yogurt helps balance the smoky BBQ flavors with creaminess and acidity.
