Instructions

  1. Prepare the potatoes: Peel the potatoes and rinse them thoroughly under cold water to remove any dirt or impurities. Pat them dry using kitchen towels to ensure the olive oil sticks properly during seasoning.
  2. Slice the potatoes: Cut the potatoes into slices about a quarter to half an inch thick. These slices will later be cut to create the accordion effect.
  3. Create the accordion cuts: Place each potato slice on a cutting board. Insert chopsticks or similar objects on either side of the slice to act as a guide, preventing you from cutting all the way through. Thinly slice the potato vertically between the chopsticks without cutting through entirely. Flip the slice over and cut diagonally on the other side, also using the chopsticks as a stopping point. This creates the signature accordion pattern.
  4. Season the potatoes: Drizzle the olive oil generously over the potatoes. Sprinkle salt to taste, making sure the seasoning gets into the folds of the slices for maximum flavor.
  5. Air fry the potatoes: Preheat your air fryer to 350°F (175°C). Place the prepared potatoes inside the basket in a single layer, ensuring they have space for even cooking.
